* Asian-ish Orange Chicken Burritos, Snapea Crisps (peas)

* The Hubs, still doing to much but when I’m sick I take help wherever it comes from even if it means a bit of guilt: Fried Breaded Pork, mac and cheese soup, lima beans

* Parent-Teacher Night: Leftover Gumbo and some Brown Rice

* Store bought chicken, Hubs made the rest: Fried chicken, Oven fries/roasted potato wedges, baby carrots (raw for some, cooked for others), buttered corn

{October 11, 2008}   Meals/Week in Review: 10/4-10

* Bill’s Talapia, Roasted Garlic Scalloped Potatoes, corn (I have pictures, but who knows when or if my darling hopalong will feel up to the attic trek to plug recipes in)

* Ravioli Soup

* Tuna and White Bean Pasta Fagiole garnished with shaved parm

* Crockpot Simmered Gumbo, Rice, and Daddy’s Cornbread

* Hubs went back to work so they made it out the door late (but supposedly he got them both to school on time) I took notes for Bluejay’s never ending story on Animal Habitats, went Cub Scouts where I became the go to mom having to help with all things paper mache (eew eew eww), and then I went to Target and ran around getting all the things we needed (including stuff to soak the Hubs’ foot) while hubby took the kids to the drive thru, did more junk including getting everyone ready for and in bed and trying to tend to the hubster’s foot: so we had BK takeout… I personally had a cold chicken sandwich (they did not hold the mayo, so I actually tossed the bread and lettuce and had a cold towelled of piece of chicken) and onion rings… starved to death and made a peanut butter and honey sandwich that I snarfed down at 10+ pm, maybe even 11… (and still went to bed hungry because I was too tired to bother)

* Beef and Mushroom Sauce over rice (rice leftover from gumbo), Girl Scout Potato Casserole, Salad

* Hubs made dinner (in spite of his foot) because I was so sick: Chicken and Rice Soup w/green beans in it…

PS. yes we were supposed to be in chicago friday night… but I was sick, so we only made it to somewhere in arkansas before having to turn around and cancel… so no fun!! (though we may go to the local zoo tomorrow after church) and Hubs will probably go on in to work on monday afterall, since we obviously won’t be driving home… but leaving a little earlier than usual to be in time to get us to the parent teacher conferences…



{October 6, 2008}   Meals/Weeks in Review: 9/13-26

First off, sorry for being such a slacker… second of all, this will pretty much catch me up as I now only have a couple of outstanding recipes to post…

Sept 13-19:
* Black Bean Lasagna, salad
* Fast Food Takeout: Bill and the kids had Backyard Burgers (the kids had free meal tickets), I had Quizno’s…
* Southwestern-ish Lasagna Roll ups, salad? (can’t remember for sure)
* Pulled chicken sandwiches (made with leftover Mandarin Chicken filling and caramelized onions), Asian Five Spice oven fries
* Tired mommy day + scouts = frozen battered fish and frozen onion rings with ketchup (sad I know, but it gotten eaten so quickly so we could get everyone out)
* Chicken, Spinach, Apple and Grape salad-all, grilled cheese–the kids, portabello lasagna–us
* the pitty pat turns 1, as his treat I make a dinner which he can fully partake and not feel jealous of the siblings: an all in one polenta (not only the perfect finger food but quick and simple too), roasted green beans with shaved parm (turns out he LOVES parm, who knew… I mean it’s been in things before, but this time he fished out every scrap of cheese he could find before starting on the beans and he loves roasted veggies so that’s kinda big love to trump them…)

Sept 20-26:
* Paprika Chicken, Scalloped Potatoes, green peas
* bluejay turns 6: Birthday Cod (it’s got bacon and fish!! the boy was in heaven), Cheesy Risotto, and boiled green beans–just beans, bacon grease, onion and water really, spiderman cake (aka. I made a chocolate cake with chocolate icing and we topped it with a small spiderman cake from the store as it really was only $3-4 dollars more than they’d sell us the topper alone)
* Store bought, due to the 6 yo’s Community Helper project being largely unfinished: fried chicken, mac and cheese–me, potato wedges–others, salad
* another quick meal for facilitating the CH project wrap up: burgers (which I “grilled” in the oven on the cast iron grill, preheating it before putting the burgers on it, around 400-425 I think… and it totally worked!!! making me a rock star in a propaneless house… the grill did look a bit of a sad state by the end… so I might have to check with the spouse how hard it was to wash before making it a habit, though for now I’m a happy happy girl at the discovery), potato chips, salad
* campbell’s tomato soup with mini wagon wheel pasta cooked in it and some WG goldfish for the kids, Quick Fish Chowder for us
* Hubs called needing to work late, so: hot dogs, tator tots, carrot sticks (salad for the non-“hard” carrot eater)
* Hubs, home, cooked while I crashed on the bed weak with a probable hypoglycemic spell (he even brought me gorp while I was there) and made: sausage pasta, and a tomato, olive, fresh mozz salad that unfortunately 2 out of the 3 kids rejected (but they all fished out the cheese, LOL)…

Sept 27-Oct 3:
* Daddy’s Red Beans and Rice, salad
* “Grandma’s Chili” (Hubs), Grandma’s Rolls (mine)
* Spicy Chicken Tortelini Soup, the last of Grandma’s Rolls
* Lentil Hodge Podge
* Open House/Report Cards at Bluejay’s:bought CD’s fried fish, hush puppies, green beans, and made mac and cheese (lazy lady started before we left for the school) at home…
* Homemade Lunchables: meat (bologna and ham), cheese (mozz), and crackers (wheat townhouse and garden veg ritz), snapea crisps (aka. “pea chips”), dried apples and dried figs–the kids; a big eggy cheesy baked mac and cheese casserole for us (I think bill had a salad but I just ate more mac and cheese and pretended they were green peas…)
* Breakfast for Dinner: Cottage Cheese Pancakes with Pineapple Orange Coconut Salad, fried turkey spam (aka. not really spam at all but sacrilege)

Bonuses:
* Peach Bread, folllowed up by the Peach Blueberry Bread that served as baby’s b-day cake (but he tuckered out so we did it in the morning instead)
* the Hubster slept in, so I made breakfast: French Toast
* the I am a cow/I need to make something for Eat to the Beat special: Buttermilk Love Pie (another Grandma dish for the grandma fest on Family Favorites night…)



{September 25, 2008}   Meals/Week in Review: 9/6-12

* Mandarin Orange Chicken Salad Wraps, Asian Veg w/Soy and Seeds, Sweet Potato Fries

* Leftovers: Some had Chicka Cherry Cola over rice, others Mandarin Orange Chicken filling over rice, all had Microwave Cream Corn

* Applesauce Meatloaf Patties, Buttered New Potatoes, Green Salad w/grape tomatoes

* PTO mania (both schools scheduled same time, did the parent split up shuffle, plus a book fair): Pizza (at BeeGee’s school); McDonald’s takeout–Hubs, bluejay, and girlie

* a new lazy lady: BBQ Succotash Rice

* Blueberry Ricotta Pancakes, eggs scrambled with parm (yolk only for the baby), bacon (none for baby)

* Campbell’s Chicken Noodle and Grilled Turkey and cheese sandwiches, salads–the kids; something else for us



{September 25, 2008}   Meals/Week in Review: 9/2-5

* Lazy Lady Stroganoff, green beans

* I ate something but didn’t post it for so long I can’t remember now

* Attempted Eat to the Beat: Chicka Cherry Cola over Brown Rice (sweet short grain), Hulled Barley, and Some Other Forgotten whole grain [1/2 rice, 1/4 barley, 1/4 other cooked with around 8x amt of salted water and drained]; green beans

* Pizza (didn’t make–just picked up Hot-n-Ready’s)



Down south for the weekend, things went ok (although we missed church because 27 was bumper to bumper evacuees, so we gave up on crossing–other made it to church though so I suppose we could have tried harder, or really we probably should’ve tried again at later service)… so far just some debris from wind and about 2 hrs of power outage where we were… as for the gulfport/biloxi area, they in particular appeared to fare ok… the had the power flicker but didn’t actually lose it for even an hr… The winds got pretty bad and they have a few limbs but as of last night could see no trees down in the neighborhood. They had a curfew that was only going to going to be lifted this morning so they hadn’t been able to get out yet, but things looked ok so far and no work or school today so they can figure it out. Have not heard yet from the LA folk though (plus they evacuated anyway so they don’t actually know anything yet), but it really seems to have gone a bit wider out then predicted so the results will likely be better than expected at least…

But onto the eatin’s…

* Sat Lunch: Chicken Tetrazini, green beans, salad, g-ma’s rolls
* Sat Dinner: Salmon Croquettes, boiled cubed potatoes (just s/p, butter), ?blanking on the veg?
* Sun Breakfast: Individual Blackberry Custard Tarts, scrambled eggs
* Sun Lunch: Hamburger Pie, lima beans, roasted matchstick potatoes
* Sun Dinner: Smoked Pork Chop and Wild Rice casserole, corn, salad
* Sat/Sun Desserts (eaten interchangeably at lunches and dinners): Lemon Cake and “It Will Insult Your Intellegence It’s So Easy (Sort of a Puddin’)”

* Mon breakfast: blueberries and cream oatmeal, plus bonus: batch of blueberry muffins for the neighbors that of course had to be tasted…

Then we backed out of lunch to make our run for it before the winds kicked up too much to be on the roads… which ended up working out swimmingly since you could easily count on your hands the other sillies not hiding indoors somewhere (until we almost got past Jackson, and even then it was slim). We made good time and were able to drive around even major debris and limbs and such easily because of the lack of traffic (and yes, most of those few others were taking the shelter turns so we were amongst our own unique brand)

For those looking for clicky menu links, they will come/get updated when I post the recipes but I am posting this now for the ones looking for family updates since some may see this before I talk to them… (I’ve been on the phone from yesterday afternoon until bedtime and I haven’t hardly begun to check in with everyone…) So they know something before we can talk.



{September 1, 2008}   Meals/Week in Review: 8/25-29

* 5yo’s pick: Meatball Sandwiches, Hot Crash Potatoes (aka. Potato Cookies), Raw Broccoli with Ranch Dressing

* hubby’s choice, “fish” (Dinner Diva too): Catfish Po’ Boys, corn on the cob (quick tip: boil with a pinch of sugar instead of a pinch of salt to keep the kernels tender and just salt when eating), Squash Hush Puppies

* 4 yo’s pick: Cheesy Potato Broccoli Soup, Grilled Cheese Sandwiches, Raw Carrots with Ranch Dressing

* My meal: Bacon Cheddar Tuna Melts, onion rings (just the freezer ones in the oven), leftover hushpuppies, and leftover veggie sides rummaged from fridge (not really the same for anyone)

* leftover pork and veggie soup

Bonuses:
* Hoagie Rolls
* Creole Rémoulade

The Not Quites:
* put on hold and replaced with the catfish: Blackened Grouper, Peppy’s Jamaican Rice and Peas, Cabbage Slaw w/Mojo–for us; Breaded Tilapia (just store bought freezer planks you bake), Rice and Corn Sornething, and Cabbage Slaw dressed w/Ranch–for the kids–we’ll probably do this next Friday I would imagine…



{August 26, 2008}   Meals/Week in Review: 8/18-24

* Pasta w/Bacon, Butternut Squash, chicken and parm… (I promise I will not be lured again by the appearance of winter squash in the grocery before season and will wait patiently for a more appropriate harvesting as this had a strange young, almost grassy flavor that completely took the wind from my sails) and buttered snow peas

* The belated and modified caribbean meal: caribbean pork roast and rice, sweet potatoes with pineapple, chili fried bananas….

* the no cook, out too late at home depot on scout day fast food run: burger king take home (see I told you I don’t make everything from scratch, everyone has those ‘gotta eat’ moments)

* Leftover Warhol Lentil Soup (which I billed as chicken and bean stew with the kids and it passed with flying colors), and French Tomato Pie

* A neighborly day for a neighbor: breaded chicken, cut into nuggets for the littles; blender puffy mac and cheese ; leftover french tomato pie; french bread; lemon cake and cherry ‘bread’ pudding and vanilla ice cream

* French meal w/GTG’s dessert: French onion soup; steak au poivre w/sauce; roasted parsnips, mushrooms, and green beans; and triple chocolate mousse

* Pork and Veggie Stew made from the caribbean meal leftovers…

Bonus:
Joelen’s White Wine Picnic Challenge, Saturday’s dessert: Sparkling peach melba-ish gelatin

Not Quites:
* Apple Wine Glazed Apple Cupcakes – was going to make this for the scout bake sale at the church but get this, couldn’t find anyone selling boone’s farm, LOL  soooo, helf a dozen stores and a couple of phone calls later we gave up for now, but I will totally be making this as soon as we locate some BF apple wine…
* Road friendly fare for the drive to Chicago, hybrid combo with the 2 yo’s pick: Mandarin Chicken Salad Wraps and sweet potato fries — I’ll make this in the coming week…



{August 23, 2008}   Feeding Lady Di… (a menu)

Ok, so obviously not the lady Di… I mean even I’m not “eccentric” enough to try to feed a corpse. But my sweet friend of the same name, who has recently become my neighbor, asked if we wanted to do dinner Friday night… and seeing as we couldn’t leave in the afternoon as previously planned, I nixed the plan of car friendly fare (mandarin chicken salad wraps and sweet potato fries–will still do later) for something a little more sit down.

The crew: 4 adults, 1 teen, 1 preteen, 2 kindergarteners, 2 preschoolers (4 and 2) and the baby…

The plan: We all meet up at their house after work… I make all the cooked food as I am home while everyone is at work… they pick up the accessory items at the store on the way home.

The menu:
* breaded chicken, cut into strips for the kids (a take off on the Crispy Yogurt Chicken but without the yogurt, since I had only vanilla, or panko…which in hindsight may seem completely unrelated as I read the recipe once, realized I didn’t have what I needed but liked the idea, and went wandering in my own direction…but I like sharing credit so there you go check her out I just discovered her a week or so ago and will be making some things in the near future)
* blender puffy mac and cheese (I don’t know if this would be considered a mousse or a souffle or neither but I liked the idea of yet another mac and cheese and this sounded too simple, I mean isn’t dumping everything in a blender easier than making a bechamel and adding cheese–ie. making a mornay… and it’s a no brainer which looks more impressive.. and really I wanted to show her how sometimes things that look hard can be really, really easy… as she fancies herself not much of a cook but with minimal effort could entertain with this and no one would believe she wasn’t…and who doesn’t like baked mac and cheese? she can use it at will…)
* leftover french tomato pie (from last night, because we had 3/4 of a pie in the fridge and were leaving town)
* “bread” pudding from lemon cake and cherries (because I had dairy to use up and a whole flopped cake–too dense and odd spongy squidgy textured–in the freezer from the great boy scout debacle… I made it with the kids, so maybe the measurements were just way wrong I dunno… but needless to say it needed a use… and when do you have cause to use an entire cake worth of leftovers?!? don’t know if this can save it but this can use it and that’s enough for now… bonus points if people like it.)
* Plus the grocery pick ups: salad, vanilla ice cream to go with the pudding, beverages, bread/rolls or cornbread…

The motive: because friends, like family, come first… and despite being up the street we’ve been too busy to give them a proper housewarming…



{August 18, 2008}   Meals/Week in Review: 8/11-8/17

* I didn’t really feel like cooking on Monday, and the Hubs had to work really late due to the morning’s running around…so a nice do nothing meal: Barillia’s wg rotini with spinach marinara (and pepperoni for Hubs), salad
–Don’t get excited I haven’t made a pasta sauce from scratch but maybe once this summer, too much a bum I suppose as it’s not hard and this is when we like to have them…you know the tomatoes, summer thing. But more notably because I didn’t want to cook, you see; although I contemplated it for a second, actually twice when I remembered it was tomato weekend in Joelen’s challenges.. but alas it is not meant to be, and if faithful to the menu I will not be showcasing tomatoes in anything this week so I’ll see if the Hubs wants to in his Saturday cooking. So the sauce was just made from a combo of two different jars of premade sauce, spinach and a tiny bit of bacon grease–literally I presnipped some slices to package up for another night’s dinner and let them lay in the pan before packing in a tupperware and used those tiny traces to wilt the spinach in so maybe a tsp? Oh and I didn’t prechop said bacon to be so vastly on top of things later but because I was going to make that bacon dish Monday night until I decided not to, which just happened to be after the bacon was in the pan.

* Hub’s request: Red beans and rice, caramelized broccoli, salad

* 2 yo’s request (made for a perfect quick and easy scout night): Fish (just baked freezer planks), mac and cheese, peas and carrots

* 5 yo’s pick; Hubby’s pick: Chicken Noodle “possibilities” (aka. Campbell’s soup), green beans, grilled turkey and cheese sandwiches –for the kids; “Andy Warhol” Lentil Soup and ciabatta –for me and the Hubs (and I of course ate the green beans too)

* 4 yo’s pick, breakfast for dinner: hashbrowns, egg and sausage casserole, “Fruit Pie” (ended up making a peach berry) w/Vanilla Ice Cream

* the Hubster’s treat for the Midtown Mama: Chicken Fra Diavolo, Sicilian Broccolini–for us; leftover baked ziti (from the freezer of course) and broccolini sauteed with just garlic (1 bunch broc, 4 cloves garlic)–for the kids…

* Pecan Crusted Mahi-Mahi, Beer Cheese Risotto, Broccoli Slaw dressed in Ranch

Bonuses:
* Tues post-doctor visit lunch: pizza
* Sat breakfast: berries and ‘cream’ oatmeal

Would be meal that never made it (for the couple of people I talked to about it, that may be wondering where it went):
* For Joelen’s Carribean Challenge: “Carribean” Pork Roast and Rice, Sweet Potatoes topped with pineapple and sunflower seeds, Chili Fried Bananas, Broccoli Slaw with Moho Sauce (dressed with lime and OO for the kids)–sorry I totally backed out and made a different night’s meal (breakfast for dinner), I reckon I still may consider making this later… since two of the recipes were already requested, *giggles* but I’m not sure when…



{August 12, 2008}   Meals/Week in Review: 8/4-8/10

This week was mostly by request…

* Hillshire Farms Italian Style Smoked Sausage sandwiches with onion/peppers, sundried tomato pasta, raw broccoli (didn’t preheat the oven in time for the bread, so cut up into yeast rolls and sprayed with olive oil and sprinkled with garlic and salt.. put the onions in the cheese sauce for the pasta and skipped the peppers)

* BeeGee’s choice (4 yo): Pulled Meat Sandwiches and Corn for the Kids; For another of Joelen’s challenges (maybe): Potage Maigre – Me

* Recipe requested, so I had to make it again to know: Shrek Ogre Mac and Cheese, carrots, meat? (I can’t remember if the kids had any but I know I didn’t)

* The Hub’s choice: Breaded Flounder, Country Style Green Beans, Tater Tots – for Hubs and kids, Rice – for me

* Bluejay’s pick (5 yo): Spaghetti w/Meatballs, Salad w/Croutons (just cut bread into cubes, or cut slices and let the kids tear into cubes, toss with olive oil, s/p, garlic powder and broil each side), leftover green beans for me

* Hubby giving me a tutorial, per my request: Stuffed Salmon, corn, wild rice blend

* Girlie’s pick (2 yo): Roasted Chicken, Accordian potatoes, grape carrots

Bonuses:
* Sat morning – Bill made “Turtle Pancakes” (chocolate chips, butterscotch chips, pecans) from this basic recipe

* Soda Chops (a BBQ-ish sauce made from cola, or your fav brown soda), Lazy Lady Mac and Cheese, Crowder Peas

{July 24, 2008}   Meals/Week In Review: 7/14-18

* Maui Burgers, Corn (cut from the cob, saved the cobs and later make corn broth… was gonna try the microwaved cream corn with it but was to lazy to grate the cobs at that particular moment), cheddar potato chips, and snapea crisps (aka, snap pea chips) [technically this meal was actually 7/7–and this is when I used the leftover roasted corn from Donna’s by the way–but I can’t remember all of this weeks meals plus I made the corn broth from these cobs in the designated week so I thought I’d throw it in since it was semi relevant]

* Hubs bought Rotisserie chicken and mashed potatoes w/gravy, I made steamed carrots and green beans and garlic rolls (a loaf of pop can french bread cut into little squarish pillow rolls sprayed with olive oil and sprinkled with salt and garlic powder)
* Pork Chop Loaf, mac and cheese, raw broccoli with ranch dip
* Creole Chicken and Andouille Rice with Veggies Thingie for Cub Scouts
* Amber’s Spicy Garlic Lime Pasta with quinoa rotini (and spinach instead of broccoli because I forgot and used it earlier)—but I’ve got more changes in mind for this so I’ll post it next time and I’ll be making it with broccoli then…

I forget a lot of what we ate so if I mentioned something before that isn’t here that’s why it’s in the land of the missing… sorry I skimped on recipes here if you need/want one in particular I’ll type it up but I really made nothing too unusual this week… and a lot of do little recipes, watch for that trend to follow in this current week’s post…
